We are in New York, and it is COLD! The sun is shining, and the blue skies try to fool you, as it is cold when you swing open that hotel door and step out. I am wishing I was behind the stove making a big pot of this Caramelized Shallot Polenta. I love this recipe!
This is a recipe I recently developed for Eat Boutique, and it came about after an amazing Italian holiday dinner at a little hole in the wall in Reno. It is really perfect for the last few days of winter dining. I mean Spring has to be around the corner, right? It is rich in flavor with caramelized shallots and tangy sun-dried tomatoes. It is wonderful on its own, and even better when served with roasted chicken, meatballs or even braciole.
