Truffle Honey Grilled Cheese

I have a delicious recipe for you using fresh truffles.  I am using fresh Black Winter Truffles, to make this insanely delicious grilled cheese sandwich.  My goal with sharing truffles with you is to show you that there are many options for using fresh truffles as well as truffle products.  That truffle are not meant only for “fancy food”.  Everyday meals can be made extra special by using fresh truffles as I did with this recipe for Truffle Honey Grilled Cheese.

Truffle Honey Grilled Cheese

I was inspired to make this grilled cheese after an insanely delicious meal at a new restaurant in San Francisco, called Cockscomb.  One of the many courses that were served to our party was a truffled infused grilled cheese, and it was out of this world.  The timing was perfect as I had just received some fresh truffles from Gourmet Attitude, and while I had another recipe in mind, I knew I had to recreate this.

I made a loaf of brioche, and added two teaspoons of black truffle oil along with the butter during mixing.  After baking the bread, I got to work on the rest of the recipe. I want you to keep in mind, while this brioche recipe is fairly easy except for time, you can always buy a pre-baked brioche to make this recipe.

I used a creamy taleggio cheese, which is a bit strong but melts very well, and pairs heavenly with the honey and fresh truffles.  Don’t skimp on this grilled cheese, use butter for browning the bread golden.    Then sit back, take a deep breath, and enjoy each gooey and warm bite.

Recipe:  Truffle Honey Grilled Cheese

Ingredients:

  • Preferably homemade brioche – please see our truffle brioche recipe
  • honey
  • taleggio cheese
  • 3 tablespoons butter, melted
  • fresh black truffle shavings
How To:
  1. Cut two slices of bread, about 1/2″ thick.
  2. Lightly drizzle with a little honey on each side of the inside of the bread. Lay thin slices of the cheese over the honey.
  3. Preheat a heavy frying pan over medium-low heat.
  4. Butter the outside of each bread slice, then lay into the preheated frying pan.
  5. Fry until lightly golden, about 2 minutes, over low heat. DO NOT LET BURN. Flip.
  6. Spread a little more butter over the golden brown side of the sandwich, as well as a 1/2 teaspoon of honey, then top with truffle shavings. The honey helps the shavings stick. Flip over for about 30 seconds, then flip back over.
  7. Cover the frying pan with a lid, and let cook until the cheese is melted and the other side is golden brown.
  8. Serve.
  9. Melt.
