This recipe came about after an evening of overindulging. Not the omg I want to lay in bed all day, but rather the head hurts a little, and I need some spicy love in my tummy. This recipe for Hangover Breakfast Tacos cured me and had me up and at them in no time! Don’t worry you don’t need to have a hangover to enjoy. Since then, I have also made as a pick-up and go after the gym.

Hangover Breakfast Tacos

 

A few staples that can always be found in our kitchen, and ones that save us in case of emergencies such as this are 1) bacon, 2) some sort of beans, 3) eggs, 4) assortment of Tabasco, and 5) tortillas.  While I sipped coffee, I chopped potatoes, onions, and garlic, then I pan-fried everything along with some ancho chili powder until crispy but soft in the middles.  I made some refried beans from some pinto beans that were tucked away in the freezer for days like this.  While the bacon sizzled away on the stove, I sipped more coffee, beat some eggs, and shredded some cheese.  I was beginning to feel better already.  All that was left to do was slice and dice some cilantro, jalapeño, and avocado.

The Hangover Breakfast Tacos came together nicely;  loaded with protein, spicy beans and lots of Tabasco sauce.  I was feeling like me in no-time.

Recipe:  Hangover Breakfast Tacos

Ingredients:

1 medium yellow potato, scrubbed and cut into small dice
1 tablespoon yellow onion, minced
1 garlic clove, minced
1 tablespoon olive oil
4 strips of bacon
2 large eggs
1/2 cup refried beans
4 tablespoons shredded jack cheese
1/2 avocado, sliced
jalapeño, sliced
2 tablespoons cilantro, minced
2 flour tortillas
hot sauce

How To:

In a large frying pan heat the olive oil and add the potato, onion, and garlic. Stir, and cook over low heat until crispy but soft in the middle; about 10 minutes. Set aside.
Cook the bacon until crispy.
Heat the refried beans.
Scramble the eggs.
Heat the flour tortillas.
Place a tortilla onto a plate, spread about 1/4 cup of the beans on each tortilla, then evenly divide the cheese, potatoes, eggs, bacon, avocado, and cilantro over the top. Add some jalapeño slices and hot sauce.
Serve.
Eat.

here on Roatan and the rest of Honduras we call this `baleada` is has been around almost 100yrs. You can buy one like that for $1.50 another $1 buys you a beer. Bam!

btw there are almost daily direct flights from Houston to Roatan (RTB)

This site looks wonderful and what an interesting recipe. This Hangover Breakfast Tacos looks very delicious and nutritious. Your ingredients and procedures are very unique, I love it.
