This is the last of our easy to make at home truffle recipes for 2014. I wanted to end on another high note by sharing a favorite standby recipe, all truffled up. I always have some pasta in the pantry as well as some cream, butter, and parmesan in the refrigerator for impromptu meals. You never know when guests may arrive and you want to serve them something wonderful. Or maybe you are tired after a long day or a business trip, and your soul needs some comfort food. Alfredo sauce is one of the recipes that makes any pasta seem elegant, and when you add white truffle cream as well as a sprinkle of fresh truffles it definitely has been taken to higher levels. Truffle Alfredo Sauce
Ingredients:
1/2 stick unsalted butter
1 cup heavy cream
2 teaspoons white truffle cream
5 ounces grated parmesan
1 pound fettuccine
black truffle shavings ** optional for garnish
How To:
Place a large pot of water on the stove, and had a tablespoon kosher salt. Bring to a boil.
Cook the pasta according to the directions on the package. I undercook by 1 minute.
While the pasta is cooking, bring the cream and the butter to a boil.
Remove from the heat and whisk in the parmesan cheese and the truffle creme. Season to taste with salt. Set aside.
Drain the pasta, and lightly toss with some olive oil in a large serving dish.
Mix in the truffle sauce.
Shave thin slices of fresh truffle over the top of the pasta if you are using.
Serve.
Eat.
