We were at a client event a few weeks ago, which meant we were dependent on conference food. Every afternoon they would bring out trays of stale cookies that claimed to be vegetarian or vegan-friendly. In my opinion, they were slices of cardboard in disguise. Each time I passed those long white tables filled with trays of cookies, I grabbed one but of course, and then my mind wandered to oatmeal cookies. I kind of became obsessed with them, thinking of how I would make the oatmeal cookie even better. Needless to say, I came home, and immediately began working on this recipe for Cherry Chocolate Chunk Oatmeal Cookies!
I started this ultimate oatmeal cookie journey by making a simple oatmeal cookie with no extra goodies inside, just old-fashioned oatmeal cookies. I used a mixture of coconut oil and butter, along with light brown sugar. It was good, a little chewy and slightly crispy. The next batch, I added chocolate chips, and it suddenly was better. Still a little crispy but oozy with chocolate. After a couple more batches, playing with dark brown sugar and adding more eggs, I tossed in chunks of dark chocolate along with some dried cherries. Suddenly, my good old-fashioned oatmeal cookie was even better. The tart cherries, added a sudden surprise, while the dark chocolate was soothing. If I baked the cookies for 10 minutes, they were soft inside and out, and if I baked them for 11 – 12 minutes, they were soft inside with a nice a little crisp on the outside.
It is safe to say, I am completely and utterly addicted to this recipe for Cherry Chocolate Chunk Oatmeal Cookies. I have a feeling, I may be whipping up a few more batches. Now to find someone to share all these cookies with, as we know how a certain someone does not like sweets laying around.

Chocolate Drizzle Coconut Macaroons
Cherry Chocolate Chunk Oatmeal Cookies
Chewy oatmeal cookies are more fun when made with tart cherries and chunks of melty chocolate.
Ingredients
- 1/2 cup unsalted butter
- 3/4 cup coconut oil
- 1 1/2 cups dark brown sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- pinch salt
- 1 cup dark chocolate chunks
- 1 cup dried cherries
Instructions
Heat oven to 350.
In a mixing bowl, add the butter, coconut oil, and sugar, beat until blended.
Add the vanilla and eggs, beat until light and fluffy.
Mix in the oats, flour, baking soda, and salt.
Lightly mix in the chocolate chunks and cherries.
Drop dough by rounded tablespoonfuls on an ungreased cookie sheet, about 2 inches apart.
Bake 10 - 12 minutes, depending on if you like a soft and crispy cookie.
Remove from the oven, cool slightly and remove from cookie sheet to a wire baking rack.
Serve.
Eat.

What is going on? I've been obsessed with oatmeal cookies lately too, and I finally have a chance to bake some today. I need to check if I have some dried cherries in the pantry!
