We eat a lot of garbanzos at our house, in the form of a meal or hummus. It was great to find a new way to eat them as a snack. This particular time I seasoned them with some powdered curry which is always a good pairing with garbanzos – they were gone in less than 30 minutes! Hurry make some Roasted Curry Chickpeas for your next cocktail party or just to munch on at your desk.
Put out bowls of these at your next party and they will be gone before you know it!
Roasted Curry Chickpeas
Ingredients:
2 cans of garbanzos (chickpeas), drained and patted dry (this is very important) – I use a paper towel and lightly pat them dry, don’t mush them
1 tablespoons olive oil
2 teaspoons curry powder or you can substitute another spice if curry is not your jam
sea salt to taste
How To:
Heat oven to 400.
Mix all the ingredients in a bowl.
Spread out on a baking sheet.
Bake for 15 minutes, then stir.
Bake for another 10 – 15 minutes or until crunchy, but not burned.
Serve.
Eat.

We loved these right out of the oven, and I great snack when you have a bunch of crazy allergies in one house. NOBODY appears to allergic to garbanzo's!
We were interested in knowing if you usually toast these until actually crunchy. We were a bit less enchanted with the leftovers when they were cold. Perhaps we should have toasted longer?

We eat a boatload of chickpeas every week. Such a great side dish in place of potatoes or rice. I never roasted them with curry though - I usually stick to salt and pepper. Love your photo!!
