A cool and refreshing summer salad of made with bean thread noodles, crisp green beans, mouth tingly mint and cilantro all dressed with a very flavorful dressing of lime and fish sauce. This salad is easy to make and you will have dinner on the table in under 30 minutes.

This dish was inspired by a Cuban Dish, Vaca Frita. Instead making the beef crispy we stir fried it and seasoned it with fresh lime juice. Served with a simple Avocado Salad with thin slices of red onion. A light and refreshing dinner, perfect for a hot summer night or a cold San Francisco one!
Fava beans otherwise known as broad beans, faba bean, or field bean are native to North Africa and South Asia; but, they do grow very well in European countries as well as the states. It is believed that the Fava became part of the Mediterranean diet around 6000 BC or earlier. The Fava is very versatile, you can fry them and salt for a snack, add them to stews, or even eat with breakfast, the choices are really unlimited, just use your imagination.
