I remember my first time trying passion fruit as if it was yesterday.  We were in Sayulita Mexico, and there was this amazing woman who made ice cream out of a very small shop. We stumbled upon her on the second day of our trip.  We had been at the beach all day, were sandy and hot, and her smile brought us into her small shop.  There were many creamy flavors to choose from such as coconut, guava, mango as well as traditional vanilla.  The smile on Lenny’s face instantly brightened when he saw passion fruit.  He told me the story of how it grew wild all over the Azore Islands where his family is from.  It was a flavor he was very familiar with, and surprised I had never enjoyed.  I went with mango and he picked passion fruit.  While mine was delicious, I regret not ordering the passion fruit as it was one of the best things I have ever eaten.

I have thought about that ice cream ever since, and every summer I say I am going to make it.  Needless to say, it is hard to find fresh passion fruit in the Bay Area, so that task is always put on hold.  Recently our local Whole Foods began stocking fresh passion fruit.  It is crazy expensive, and kind of a luxury, but I don’t care.  I have become the crazy hoarder of passion fruit, and every time I hit the market I bring some home, scoop out the pulp and tuck it away into the freezer.  That is if I do not eat it first.  It has definitely become one of my favorite food flavors.

The weather is hot, and my ice cream maker was itching to be used, so I went into the kitchen and decided to recreate that travel memory by making passion fruit ice cream.  I used the base I typically use for all my ice cream but added passion fruit.  It was rich, flavorful and incredibly dreamy.  If you are not familiar with passion fruit, it is kind of tart, slightly sweet and a bit floral.  The flavor is really unique.  With every bite or lick it takes me back to a place that is special in my heart.

Needless to say, we hit up that little shop in Sayulita every day before heading home, for not a single but a double scoop of passion fruit ice cream.  Sometimes we even went twice a day.  I really hope to go back soon and enjoy an icy treat sitting outside that small shop, and I hope the woman with the inviting smile is there to greet me.

The first time we had passion fruit ice cream was in Mexico. Could not stop thinking about it once we got home so we had to come up with a recipe. Super flavorful as well as creamy.

Prep Time 15 minutes
Cook Time 10 minutes
Additional Time 1 day
Total Time 1 day 25 minutes

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 5 egg yolks
  • 1 cup passion fruit pulp

Instructions

    Place the cream, milk and 1/2 cup sugar into a large saucepan, whisk and then heat over medium heat until the sugar is dissolved.


    Whisk the remaining 1/4 cup sugar, egg yolks, and passion fruit together in a large mixing bowl until light and well combined.

    Slowly add half of the milk mixture to the yolk mixture, whisking the entire time.

    Slowly add the warmed yolk mixture into the remaining milk in the large saucepan.

    Over very low heat, whisk until thickened and the mixture coats the back of a spoon;  about 5 - 10 minutes.  DO NOT STOP WHISKING or you will have scrambled eggs.

    Place the custard mixture into a glass bowl, cover with plastic and place in the refrigerator overnight.

    The next day, freeze according to your ice cream makers instructions.

    After churning the ice cream, place in a freezer proof container and freeze until ready to eat.

    You can make popsicles with the ice cream as well.  Let the ice cream soften a little before spooning into the molds.

    Serve.

    Eat.

Notes

Try to find fresh passion fruits for the pulp. If you cannot, use frozen pulp that has defrosted. I have used and it works fine.

Passion fruit is my passion...I am from Madeira,island and passion fruit can be had in every garden,that sometimes there is so much to be had that we make cakes with it...but ice-cream with passion fruit is common...even passion fruit ice....we hardly use eggs in our ice-cream ,,its mostly thick cream and sometimes a bit of custard powder or corn starch is added for thickening ...but I like your recipe..i will try it without the eggs...thanks ,,,Querino

You are one lucky person - I would love to be able to find passion fruit all year. We were in the Azores last summer and I ate it daily. So good! Let us know how you like this recipe - I will have to try it the way you make it next time.

The timing of your post is absolutely perfect! Sadly, I rarely see a fresh passion fruit in northern Michigan that isn't shriveled like a prune...until yesterday! I bought a ridiculous amount of gorgeous passion fruit, which I was planning to freeze and hoard forever. I think a little ice cream is in order!

I am confused. In one of the instructions, it says "Serve." That would imply sharing. Which I wouldn't do with this ice cream! I should get some ice cream pop molds like yours--they are very cool!
