When we are entertaining, we like to keep the setting light as well as casual. We want our guests to relax completely and enjoy themselves, and not be uncomfortable. Our settings tend to be more casually chic than white linen and Mozart. This summer we have been all about setting the theme of the evening in shades of pink along with fun little pops such as sparkly candles or fairy lights along with being kind of funky. Think French collides into Morocco. Fun pieces such as colorful plates or small bites adorn the table setting. A summer party at Chez Us begins with a fun cocktail, and this recipe for Cherry PAMA Liqueur Sorbet Floats will not disappoint.  The recipe begins by making a simple (and delicious) cherry sorbet, which is made with fresh cherries along with PAMA Liqueur.  Tip, a cherry pitter will make this recipe even easier – cannot recommend enough.  The sorbet is slightly sweet as well as tart with hints of pomegranate;  which is great with any sparkling wine or sparkling water to make this fun cocktail float.  Matter of fact, the sorbet is so good that it is great on its own if you would prefer to serve as a dessert.

Cherry PAMA Liqueur Sorbet Floats

Ingredients:

1 lb cherries, pitted
1/2 cup water
1/2 cup PAMA Liqueur
1/8 cup sugar
1 teaspoon lemon juice
your favorite bottle of bubbly or sparkling water

How To:

Place the pitted cherries into a medium saucepan along with the sugar and water over medium-low heat. Bring to a boil.
Lower the heat to low and let simmer for 15 minutes, using a spoon to lightly crush the cherries.
Stir in the PAMA Liqueur and lemon juice. Remove from the heat and let cool.
Place into a food processor or blender and process until smooth.
Pour into a glass bowl, cover with plastic wrap and place in the refrigerator overnight.
Process the cherry mixture using your ice cream maker according to the directions for the one you have.
Place the sorbet into a freezer-proof container and let harden in the freezer.
To serve, scoop small portions of the sorbet and place into a cocktail glass. Top with bubbles or sparkling water.
Serve.
