I am pretty sure I have expressed my love affair with the potato, and quite frankly, could eat them with every meal. Baked and filled with all sorts of deliciousness is my idea of near perfection, and when filled with creamy mushroom stroganoff perfection has been found. This recipe is fairly simple, and comes together with ease, having dinner on the table in an hour. If you want to really jazz it up, not like it needs any jazzing, put an egg on it. Perfect fall/winter fare. I’ve been enjoying as many mushroom dishes as I can. I’m definitely going to be trying this off… love that you did it over baked potatoes instead of pasta (though I’m sure that’d be just as delicious).
