We recently made a batch of Eggplant Romesco and have been enjoying it on slices of bread, tossed with hot pasta, smeared over grilled chicken breasts and by the spoonful.  It is slightly smokey and spicy.  Full of end of summer flavors, and the texture is just rough enough to keep things interesting.  It is only one of our favorite recipes from the new Ripe Cookbook.
