TWD: Tuesday with Dorie & David (Lebovitz)

I am so happy that Beth over at Our Sweet Life, chose the Mixed Berry Cobbler for this weeks Tuesdays with Dorie challenge. Why? We needed a simple but summery dessert for our bash.

This recipe, which can be found here, is incredibly easy and everyone should add it to their “go to dessert” during summer berry season. Not only is it bursting with the warm sultry flavors of the berries (I used fresh blackberries, blueberries and raspberries), but it has a nice zang from the zested lemon and fresh ground pepper. The ultra jammy fruit with the pepper reminded me of a very bold zinfindel, hits you right away and then softens and leaves a memorable taste. I wanted to keep the dessert looking rustic so I did drape the biscuit crust (which was not over sweet and came out very flakyy) over the top, trimmed it and let it bake. It came out ……………………………. TWD: Florida Pie

you know what that means, another drool worthy day with the talented bakers over at Tuesdays With Dorie .

This week’s challenge was the Florida Pie . It is a variation on a Key Lime Pie. I have never had a Key Lime Pie, I know, that is weird, so I was excited to try this out. As well we were having company over for dinner, so this was perfect for the meal we had planned. What was even more perfect, was that Lenny wanted to help make it – I know, he is really taking that active role in this whole “cooking” and “blogging thing”, don’t be too scared!

TWD: Fluted Polenta and Ricotta Cake

Another wonderful challenge with the gang over at Tuesdays with Dorie. I am so glad that I got a chance to make this cake and enjoy it before getting hit with the flu – due to that, I will keep this short and sweet.

This cake is wonderful – very moist, slightly sweet, lots of wonderful aromas (Figs, Meyer Lemons, Honey) and a wonderful texture, thanks to the polenta.

TWD: Marshmallow (Banana split)

No, actually Dorie Greenspan style! As if I did not have enough on my plate with trying to get our new company site launched; I went and joined another baking group, Tuesdays with Dorie. The fabu group of bakers who adore Dorie. I came to love Dorie’s recipes after my first one with the Daring Bakers and the wonderful party cake, so when the chance came up to whip out the kitchen aid, again and on a weekly bases, I went for it.

My first challenge was to make Dorie’s marshallows. I followed the recipe to a T and made the vanilla ones first. I had so much fun making them – it really was like a science experiement – that I went and made two more batches. In honor of our Ape Diet, which we are sadly going to miss (NOT), I went with a “Banana Split” theme.

I made Vanilla, Banana and Chocolate. They all taste (yes, that is a BIG cheat, sampling) fantastic. The vanilla is more luscious than your typical marshmallow, the flavoring is much better. The chocolate turned out like a rich mousse, ultra creamy and rich. The banana is just like you picked it off of the tree, very frangant and very flavorful. The texture was different for all of them, the vanilla is typical of a marshmallow, the chocolate is a bit more moist and the banana is perfect not to soft and not to dense. I will definitely be making these again, I can not wait to experiment with the flavorings and the sizes of them. Lenny gave them a big thumbs up – better than your traditional ones and we are excited to try them out over an open flame!

ps….. We just roasted the Banana Marshmallows ….. OUTSTANDING!!! OH MY! Mouth watering … crispy burned sugar covering flavorful banana flavor, just need a graham cookie and a HUNK HUNK of Dark Chocolate!

Daring Bakers: The Perfect Party Cake

Moven over at Food Art and Random Thoughts is the hostess for this month’s Daring Baker Challenge. I was going to sit out it out as it has been a challenging month for me in so many other ways …. did I really need another challenge this month? As well, I was scared to have a big beautiful cake sitting around the house for L and I to devour. When I woke up yesterday morning I told L how I was going to use this months challenge as one of my two, to not do. Even though I felt it would be the easiest one I have done as of yet. Well …… he convinced me that I should not give up and I should do it.

So, yesterday at 5pm, I was making Dorrie’s Party Cake, to take over to an impromptu dinner party at our friend’s J and A’s home. Was I crazy to try to make a cake at 5pm for a 730pm dinner party!?!?! Kind of…….

The recipe is so simple to follow, everything just started falling into place, so easy. The house smelled of sugar, buttermilk and sweet Meyer Lemons – was delicious! Then came the time to whip up the buttercream …. I could not keep my fingers nor my sweet little god-daughters out of the shiny meringue and buttery goodness – we were being pretty naughty over the kitchen aid!

I used tart raspberry preserves for the filling as the recipe calls for. I was worried I may run out of buttercream to frost the cake so I did skimp on the buttercream between the layers – now I know better. I opted out of the coconut part of the challenge only because I am not a big fan of flaked coconut.

I was finished with the challenge by 645pm, just enough time to wipe off the flour from my hands and pretty up for a dinner party. The cake turned beautiful and what a wonderful combination of flavors. The tartness of the buttermilk, the sweetness of the raspberry preserves and the freshness of spring that came from the Meyer Lemons was really nice. The cake was light and not to dense and the buttercream was amazing light and fluffy. We served the cake with a chilled glass of Lemoncello – everyone loved it!

Thank you L for convincing me not to give up on this challenge and Thank You Dorrie for creating a beautiful recipe – we will be using this more often!
