Summer has finally arrived in San Francisco. We were pretty excited to come home from holiday to find warm and sunny weather. We never know how short that window will be, so we tend to break out the tank tops, light tees, sundresses, shorts and take full advantage of the warm evenings! We spent the evening on the deck sipping rose and enjoying the stillness that was filling the air; not to mention the smell of the lavender and lemon verbena that we have growing and that was incredibly full of life this evening. It definitely was an evening that was not meant to be over a stove, one that was meant to be enjoyed outdoors! I found this recipe for Almond Chutney Chicken Lettuce Roll-ups a couple months ago and have been itching to make them, tonight would be the night!

we are finally back from our little holiday (more to come on that – yum). It took a couple days to get back into the swing of actually being back home and not sipping margaritas on some lonely beach in Mexico – I know, I just have to rub it in a little bit more!
Anyhow, after all the fantastic Mexican food, I am actually craving Italian in a big way. We went out last night and loaded up on some carbs and tonight after a killer spin class and only two lonely eggplants in the fridge, I had to come up with something to cure that craving. I had wanted to go the spicy eggplant route from a previous meal we had; but, Lenny decided to bring a little friend home from Mexico and demanded, NO SPICY!

I am a self-proclaimed foodie. I eat, breath, sleep and love everything about food. After all it is one thing that you can use all your senses for: See, Taste, Touch, Smell & Hearing. I missed my calling, if I would had taken food so seriously 20 years ago, who knows I could be the next big name in Manhattan or even say, Paris. Instead, I do what I love to do, for the ones I love.
Lenny, well, he could really care less about food. It is NOT a priority for him. If, I slapped down a bowl of cherrios with a side of hot sauce, he would probably be just as happy as he is when I give him a plate of food that I have pride in. Ultimately, while he can not really complain, he just does not care about food or the eating of it, as in the same breath that I do. Now, he does care about what he puts in his body – no fast food, no fried food, not too much meat, blah blah blah; but, the final decision as to what we eat, no big deal. Do I wish that he cared? Of course, I wish he did at least a little bit, probably the same way he wishes I was a hard-core rock climber, ready to tackle the nose. Reality, it will probably not happen in the next 6 months.

I have been dying to make this recipe for the past couple weeks. I am not sure why as it is a big bowl of carrots basically; but, the photos visually grabbed me and I have been thinking about it often. We had a big bowl of it around all weekend. I even bought a big bag of beets to try making it again this week.
So good! So easy!
It has been awhile since I have blogged about a meal at Chez US. This does not mean, I have given up the position at the stove, it just means my MOJO has been somewhere else. On top of traveling for pure pleasure the past couple of weeks, I just have not been snapping with the camera. It is coming back, I can feel it, so watch out!

Did you know a chicken could be, weird? The first words out of Lenny’s mouth, before he even tasted this dish, was, “What is this weird chicken?” Now, it did not smell, “weird”, nor did it really look “weird”. In fact, it was golden brown, smelled of garlic and lemons; exactly, how could this be classified as “weird”? Maybe he is “weird” or maybe I am “weird” for making it!

I am not sure if I have just been lazy or I am really just, too busy! There is a lot going on this week, with squeezing in as much “summer fun” as I can with the MEM, working with FVM, and trying to get ready for a camping weekend. All I can say is, “I AM BEAT” and I wish I could say that the camp would be relaxing; but, 4 families, 3 dogs and 5 kids later, I don’t think it will be very quiet!
Lenny has been traveling for work this week, so this leaves me not really wanting to cook for myself. So, I squeezed in a dinner at a new little French Bistro, with a friend of mine and have been pretty much slumming it. When Lenny is gone, I have a tendency to really not cook much, with the exception of the other night. Actually, I usually do one of the same things every time he is gone and it is one of the first things I ever learned how to cook, when I was 13ish.
I was given a cookbook on Mexican food and even at the tender naive age of 13, going up in hoe-poke country town, I knew there was better out there and when I saw this recipe for homemade refried beans – YIPPY! Something not out of a can! I remember making it, loving it and resorting to it often during my teens, as well as my 20s and only the last 10 years or so, I have adapted the same memory imprinted recipe to be more of a soup and not refried. The recipe and the ingredients are basically the same with the exception of using black beans and fresh chili peppers, now. Sometimes, I add some cheese on top or sometimes some sour cream, such as today. Regardless, it is simple, tasty and comfortable, for when I am alone!
We had our friends D & JT over for a very belated birthday dinner. Originally, I was going to make Mexican food in honor of Cinco de Mayo, but they were going to be leaving for Mexico so I figured too much Mexican! We really wanted to do something different for this dinner party so we went with an Asian inspired theme.
If you are a regular reader, then you know my fear of “fish sauce”. I have been using a lot of recipes, lately, that all call for “fish sauce”. I am so naive that I thought it was the “oil” part of a dish and have been substituting just that, oil for fish sauce.
