Shake and Bake Coconut Chili Pork Chops

I had such a great time developing a recipe for Lindsay Olives for this month’s Kitchen PLAY event, that I decided to participate, as well.  It really is fun, innovating and kind of reminds me of a Chopped Episode! The National Pork Board conducted a survey to find out the trends with pork and holiday…

I’ve actually never had the original Shake n Bake (I lived a deprived childhood), but I’m so going to make your modern version. The coconut flakes are brilliant!

Jill - 10/01/2012 - 1:01 pm

I, (ahem), happen to LOVE Shake ‘n Bake, and usually will confess to buying it “because my kids love it”. Dressing it up with the coconut sounds fantastic, I will be sure to try this! Thanks Denise!

Denise Woodward - 08/01/2012 - 11:21 am

Do try out the recipe, the coconut is very subtle. Gives a nice crunch to the recipe.

Denise Woodward - 08/01/2012 - 11:21 am

It is a dark purple kale. Lightly sauteed with a little tea seed oil and garlic slivers, and sprinkled with maldon salt. Simple.

modernworkinggirl - 08/01/2012 - 10:10 am

Yumm. The kale looks really dark! Soy sauce?

beti - 07/01/2012 - 5:44 pm

the pork chops look fantastic and as you said it sounds quite exotic with coconut, it’s a bit different but it’s I bet it was truly delicious

Flourless Chocolate Tart with Candied Cranberries

I have a few things to share before 2011;  just not sure which one to share first.  Then I remembered this sinful dessert we served a couple weeks ago.  I just had to let the cat out of the bag, as you will definitely want to include it with your New Years Eve dinner menu….

HI Beth,

Did not know you went gluten free – for personal or health reasons. We have a few really great recipes over here that are gluten free – for instance this soup is really great, and the kids will love it. http://chezus.com/2010/12/02/chicken-noodle-soup-gluten-free/

Hope to see y’all soon.

Cranberry Ginger Scones

I have been playing with my scone recipes for a few months.  Actually, ever since I made these pumpkin ones.  The recipe had to be different, as it was not going to have the added moisture that these autumn inspired scones had. Finally, nailed down what I consider to be the perfect scone, and just…

Mushroom Bruschetta

We love mushrooms and any excuse to include them in a meal is a bonus around our house!  I mean, think about it, mushrooms are one of the most versatile veggies out there.  They are great in just about everything from baked eggs, all the way down to hearty vegetarian entrees.
