Soba Soba Soba ..



I found this recipe sitting on my friend’s counter and I swiped it! It was really outstanding in my opinion … sweet, spicy and full of tantalizing flavors! I gave it a 5 out of 5 and L. gave it a 3, too sweet! I did make some adjustments, I cut the honey to 1/4 cup and I used fresh ginger, which I sauteed in the olive oil before adding the chicken. Overall, it is a keeper!

PS………. UPDATE, these are GREAT the next day as a cold lunch time salad!

Sunday Night …



Back from a wonderful weekend & HUNGRY, what to make with an eggplant, some pasta and a few staples? Why, Spaghettini with Eggplant and Fried Capers served with a nice hunk (bread, not only L.);)~ We also had some of that wonderful homemade butter left, which was unsalted so I gave it a twist by adding some of this Divine smoky salt I picked up a couple of weeks ago.

Macaroni and Cheese



Needed a small amount of comfort today. Made homemade mac and cheese and a simple salad of butter leaf lettuce, heirloom tomatoes and some very nice Roquefort! Ahhhhhh….. comfort!

Soba Noodles with Cabbage and Shitake Mushrooms



Lucky for us I purchased an issue of Gourmet magazine at the Newark Airport when we were trying to get home from NY a couple weeks ago. I never buy Gourmet; but, I was intrigued when I saw on the front cover that there was a bit on sliders. We had just had some at the Little Owl so I was very excited!

Anyhow, I was inspired by a couple recipes in this issue and I made the following for dinner! Soba noodles sauteed with a cabbage and shitake mushroom sauce. I also sauteed some fresh paprika peppers to serve along side it …. to give it some heat! Was delicious! For dessert I served a homemade plum and red wine sorbet! (recipes, to come …)

Pasta tossed with Ricotta and Pesto



Have not had time to hit the grocery store – we are living on what is left in the house from last week!

Tonight: Pasta with ricotta, pesto and some tomatoes that I wilted on the stove top for awhile until they burst! Served a mixed herb salad with a sprinkling of our favorite black salt flakes. Simple but satisfying.

Pasta with Roasted Red Peppers and Chickpeas



at least for a couple days! While we love being in Tahoe with our friends, E. & W., it was nice to come home. I was itching to get into the kitchen and L. was dying for a home-cooked meal! Did not have much in the cupboards so I had to be creative with what we had…. mozzarella cheese, whole wheat pasta, some white wine …. Did pick up some Heirlooms on the way home so we were set in the salad department. Threw together a pasta dish with some Roasted Red Peppers & Fresh chickpeas (kind of .. they had been frozen before leaving). Opened a bottle of Rose that we were saving to taste – terrible, well, not terrible but not what we were craving!

Summer Vegetable Pasta

My mom use to make this zucchini dish when I was a child. I just remember how great the gooey goodness of vegetables with cheese was! This is an updated & lighter version. I tossed it with some pasta ….. light and easy for a hot summer night.

Tangerine Soba Noodles ….

with roasted veggies! Light, refreshing & delicious! Had a butter lettuce salad with a wasabi dressing. Served it with a nice 2005 Shiraz. Dessert ………… a big bowl of luscious fresh strawberries!
