It doesn’t have to take forever to be good…

TWD: Savory Galette

While the TWD crowd was making sweet summery and fruity Galette’s last week, we were traveling. I had Galette on the brain! We love peach ones, plum ones, fig ones, berry ones, you name it, we love it! Tonight I decided to try to make a savory one for dinner. Something light. Something veggie.

I used a basic Pate Brisee; but, I put a handful of fresh rosemary into the flour! For the filling I cooked some garlic and yellow onions just until lightly browned, then I added thinly sliced fennel and Portabella Mushrooms, and a sprinkle of white wine. I cooked it just until everything was warmed and slightly limp. Then I wrapped it nicely in the Pate Brisee, baked and served with a simple green salad and a glass of white wine.

Lenny’s two cents: Delicious! Really good! It did not even need any hot sauce!

Back on the Saddle

Not sure what it is, but no matter how much or how little time we spend back in Boston, we always seem to bring an extra 6 pounds home with us and it is not luggage pounds, it is the spare tire around our waists. It is hard as Lenny’s mother is a great cook and she enjoys doing it for us; but, every time we get home it is the battle of the budge. This scares us, as we wonder, will this happen to us on a regular bases if we ever moved there???!!! Definitely something to think about.

We have a good friend back in Boston, Stan. He loves to come visit us very often, he loves the city; but, more I think he loves the escape from his routine in Boston not to mention all the food he is always eating; yes, he too is Portuguese and has a mother who loves to feed him. During his visit last December, he said he became inspired by us. He said he loved our live style (living our lives the way we want too), how active we were (hitting spin class three times a week) and our diet (organic and local). Well, he went home, changed his eating habits and started working out more and actually started training for a tri-althon. When we went there for Christmas, everyone was amazed and in awe by this new Stan and they wondered, what we did to him!

Simplicity ..

this is what dinner was tonight. As Donna Hay would say, “simple made simple”. Tonight we headed back down under for a warm mushroom salad. Earthy, with a salty aftertaste from the bacon; but, then you are grabbed and pulled in by the citrus in the light lemon juice dressing with creamy feta and lemon thyme. Served with a nice chardonnay and warm crusty bread. Quick and delicious dinner in 25 minutes!

What can I say …..

I am not sure if I have just been lazy or I am really just, too busy! There is a lot going on this week, with squeezing in as much “summer fun” as I can with the MEM, working with FVM, and trying to get ready for a camping weekend. All I can say is, “I AM BEAT” and I wish I could say that the camp would be relaxing; but, 4 families, 3 dogs and 5 kids later, I don’t think it will be very quiet!

Lenny has been traveling for work this week, so this leaves me not really wanting to cook for myself. So, I squeezed in a dinner at a new little French Bistro, with a friend of mine and have been pretty much slumming it. When Lenny is gone, I have a tendency to really not cook much, with the exception of the other night. Actually, I usually do one of the same things every time he is gone and it is one of the first things I ever learned how to cook, when I was 13ish.

I was given a cookbook on Mexican food and even at the tender naive age of 13, going up in hoe-poke country town, I knew there was better out there and when I saw this recipe for homemade refried beans – YIPPY! Something not out of a can! I remember making it, loving it and resorting to it often during my teens, as well as my 20s and only the last 10 years or so, I have adapted the same memory imprinted recipe to be more of a soup and not refried. The recipe and the ingredients are basically the same with the exception of using black beans and fresh chili peppers, now. Sometimes, I add some cheese on top or sometimes some sour cream, such as today. Regardless, it is simple, tasty and comfortable, for when I am alone!

If you are familiar with Donna Hay, you know exactly what I am talking about when I mention her cookbooks and magazines. Not only is the food styling and photography stunning; but, the recipes are brilliant!

I am always looking for good, quick meals that we can whip up in less than an hour during our busy work week. Time and time again, I turn to Donna! Not only are her recipes easy but each one uses the freshest seasonal food available. As well, they are usually meant for 4 servings which makes it easy to half for two. Every time we try a new recipe, we are equally as happy as the time before. This was NO exception ……..

Slow Roasted Pork Sandwiches

I have been drooling all over the May issue of Gourmet magazine for the past month. Been dying to replicate the cover. Reading the recipe over and over again, in order to get the “slow grilling technique” down to a T. Invited 3 couples over and planned a big BBQ-a-thon.

Simple Salad


We are back on our spin schedule, which means we need to come up with a couple easy meals for Tuesday and Thursdays. Not only did we get home late but there is nothing really left in the fridge since we were playing in Yosemite last weekend instead of doing house stuff.

I was able to toss a a couple cutlets(who knew Lil’s cutlets would go so far) into the freezer, from the other night; before, L. devoured them. At least we had some protein to work with. As well we had a half of a head of butter lettuce in the fridge and some frozen pizza dough left over from the HHDH #17 challenge. What did I come up with, you are asking yourself?

I rolled the dough out very thing, topped it with some fennel seeds, olive oil, sea salt and crushed pepper and baked it into a thick and crispy cracker. While the pizza was crisping away, I tossed in the chicken cutlets to warm them up. In the mean time, I tossed a salad together of lettuce, red onions, chick peas and made a light dressing of olive oil, red vinegar, and lemon juice. Once everything was cooked and warmed, I chopped up the chicken and tossed it into the salad. Simple and easy and ready in 30 minutes.

Lazy


…… maybe it was the weather or something, but, we were lazy tonight. L. had left over soup from the other night. I had a hunk of baguette smothered in butter and Roquefort cheese – Divine! The only thing missing was a big glass of earthy red wine!
