With summer officially kicking off this weekend, I thought it was a good idea to add some grilling options to the Weekly Menu this week.  It is a tad meat heavy but I did try to even things out with some vegetarian options such as zucchini noodles.  We love these, and it is so much fun to make when using a spiralizer.  Have you tried it yet?  You must – it makes great fries too!  Remember for the Banh Mi Grilled Pork Salad you will need to marinade it the night before.

  • 1 bunch of mint
  • 1 head of red leaf lettuce
  • 2 large carrots
  • 2 small eggplants – Italian if you can find, otherwise regular is fine
  • 3 carmen peppers or other sweet peppers

Meat

  • 2 8ounces skin on chicken breasts – 4 breasts if there are four of you enjoying
  • 1 or 2 chicken breasts for salad – 1 if for 2 people, 2 if for 4 people
  • 1 1/4 pound pork tenderloin

Dairy

  • roquerfort cheese
  • 8 ounces sour cream
  • parmesan cheese
  • asiago cheese
  • fresh mozzarella

Extras

  • red wine
  • baguette
  • corn tortillas
  • 1 can black beans
  • chipotle paste or chipotles in a can – if you can find paste it is amazing
  • piment d’ville or smoked paprika
  • package of tagliatelle pasta (serves 4)
  • 6 ounce jar marinated artichoke hearts
