The weekend here and all I can think about is a hot, sticky end of summer weather.  The kind where you want to lay around, dangling your toes in the grass, sipping lemonade or even better licking these adult popsicles.  I developed this Aperol Limeade Popsicles recipe for Eat Boutique, but we have been enjoying them often this summer as it has been hot, hot, hot in the Bay Area.   Why should the kids have all the fun?  Adult popsicles are here to stay!

Aperol Limeade Popsicles

 

These adult popsicles are really FUN to serve as a welcome cocktail at your next summer dinner party.   The recipe for Aperol Limeade Popsicles is super easy to make, and is sweeten with a tangy homemade limeade and bitter Aperol.  You will definitely feel as if you are soaking in the sun in Capri in no time!

Tools:

  • 10 popsicle molds
  • 10 popsicle sticks

Recipe:  Aperol Limeade Popsicles

Ingredients:

Popsicles

  • 2 1/2 cups limeade (recipe below)
  • 3/4 cup aperol

Limeade

  • 2 1/2 cups unrefined sugar
  • 3 cups water
  • 3 cups fresh lime juice (about 10 medium limes)
  • Zest from 2 limes

How To:

LIMEADE

  1. To release the juice from the limes, roll them back and forth on the counter, then squeeze into a large bowl.
  2. In a saucepan over medium heat, dissolve the sugar with the water. It should take about 3 minutes, be sure to stir occasionally and keep you eye on it as you do not want it to boil. Remove from the heat, and let cool slightly.
  3. Stir in the fresh lime juice and zest.

POPSICLES

  1. Combine the limeade and aperol in a large bowl, and stir.  A bowl with a spout works great but a regular mixing bowl is okay too.
  2. Evenly distribute the mixture between the molds. Place the mold into the freezer for 1 1/2 hours.
  3. Place the top of the popsicle mold on top, and then slide the sticks into the popsicles. Let freeze overnight.

These look and sounds fantastic! I'm ready for flavors of Capri! We were in Italy in May and I miss the carefree tastiness of that beautiful country!

I just tried Aperol for the first time last weekend (I clearly live under a rock)! Totally obsessed now, and dying over these popsicles! They are so fantastic!
