

I just went through Chez Us, and realized I have not been posting as much as I should be I would like to be doing. After all, this site is based on what we have been having for dinner every night. Right? We have not given up food. We still eat.
This year has started out with a bang. I feel like the past couple months have been a big, fat, blur. We have been really busy; with work. Filling the pipeline, and working on a few projects here, and there. This all takes time, and a lot of energy. I did not realize that we were not cooking as often as I would like, until I went through the past few months of expenses. I was floored, and Lenny’s belly and my hips are angry. Over $150 a month, in pizza delivery. WTF? This is good money that could be spent on a decent night out, or even putting away some good wine.
I told Lenny, that pizza delivery is now – OUT! If we are hungry for a thin crusted pizza, we will make it. After all, it is easy to do, healthier for you, and you can get as creative as you want with toppings. We are going “Back to the Basics”.
This recipe for homemade pizza dough makes 4 small thin crusted pizzas; about 5 – 6 slices per pizza. We usually make 1 or 2, for dinner, depending on how hungry we are. If you add a green salad, you have a complete meal. The other rounds of dough, I put into the freezer for another time. All you have to do, is take it out in the morning, put it into the refrigerator, and when you get home from work, you have dough that is ready to go.

Recipe: Pizza Dough
- 2 cups 00 flour
- 1 package yeast
- 1 cup water, warm to touch
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
Mix water, yeast and sugar together, set aside until bubbly and doubled in size, about 10 – 15 minutes. Put flour and salt into a food processor fitted with dough attachment. Add yeast mixture and mix. Slowly drizzle oil in as it mixing. Knead using the food processor for about 5 minutes. Set aside in an oiled bowl until double, about 45 minutes. Punch down, knead with hands and then divide into 4 equal pieces of dough. At this point, you can use all of it, or put some into the freezer for another time. I put the dough into sandwich sized ziplocs.

With pizza like that it would be a sin to order out. I like the idea of stashing part of the dough in the freezer for those busy days.
We make pizza at home all the time. We use the basic pizza dough recipe in the Silver Spoon cookbook and treat it like your standard kitchen-sink recipe. We’ll put almost anything on top of a pizza! Crazy stinky cheese? You got it. Leftover stir fry vegetables? Sure thing. As long as it doesn’t weigh down our lightweight, fast-cooking crust, it’s a go.
We stopped letting our dough rise too a while back on the advice of some friends and we’ve never turned back. It freezes wonderfully and thaws in a couple hours or in the fridge while we’re at work. Never fail.
Despite owning a beautiful pizza stone, I have not done homemade pizza in a very long time. I’m going to have to do that this summer… such a wonderful thing to eat outside with a big bottle of wine.

We make pizza at home! The key, we’ve found, is to let the dough rest a bit before working with it. Also, a pizza stone is a brilliant (and cheap) way to get an incredible crust. Your pizza looks yummy!
hehe. Girl! that’s a lot of pizza delivery. I’m reading this while clearly hungry b/c that’s making me really, really happy. This post is nice because I”m guilty of buying Trader Joes’ dough which, admittedly, isn’t actually all that great. Thanks, D!
Homemade pizza is one of our staples, though I usually make a big pizza and freeze what we don’t eat. It heats up perfectly in the oven.
I need to start doubling my dough recipe and freezing that as well so I can have more flexibility. Thanks for the great looking recipe!
