Welcome to our Perfect Egg Series featuring egg basics that everyone can master.  Eggs take very little time to make, and can go from breakfast to dinner.  Our Perfect Egg Series will focus on exactly that, how to cook eggs perfectly every single time.  The first egg recipe will be for perfect scrambled eggs, which happen to be one of the quickest and easiest breakfasts to master.  Fast and delicious protein to get your day going.

Perfect Scrambled Eggs

Scrambled eggs are something that we eat often as they don’t require much thought or preparing.  I always have eggs in the refrigerator just so breakfast can be a no brainer.  Scrambled eggs can be either plain or with an assortment of fillings such as mushrooms, spinach, cheeses, or tomatoes.  The choices are limitless.  

The key to the perfect scrambled egg is how you cook it.  You want the egg to be cooked through but still creamy.  We have been trying out some different techniques and finally came up with what is our favorite scrambled eggs or as my god-daughter Maggie likes to call them “butter eggs”.  

The key is adding butter to the frying pan, as well as some butter along with the eggs that you are mixing up.  Over medium-low heat, you want to continue to stirring the eggs with a spatula until they are creamy, and slightly fluffy.  After the eggs are cooked, stop the cooking process with a little more butter or creme fraiche for a bit of a fancy scrambled egg.

I always season after cooking as you may not need salt as the butter or creme fraiche may be enough.

Perfect Scrambled Eggs

The secret to the perfect scrambled egg is cooling down the egg while it is still creamy by using creme fraiche.

Prep Time 1 minute
Cook Time 3 minutes
Total Time 4 minutes

Ingredients

  • 2 eggs
  • 1 tablespoon butter, divided in half 
  • 1 teaspoon creme fraiche

Instructions

    Melt half of the butter over low heat, in a large frying pan.

    Cut the remainder of the butter cut into small pieces.

    While the butter is melting, whisk the eggs with the additional butter pieces.  The butter will stay solid.

    Pour into the frying pan and stir spatula slowly until the eggs are cooked but still creamy. 

    Serve.

    Eat.

Notes

If you do not have creme fraiche you can use a teaspoon of cold butter.

I just made this torta for dinner and it was delicious. We're trying to cut down on our meat consumption, and paired with a nice green salad, this was a perfect light dinner. I'll definitely make it again. We have a little left over (I used 6 eggs), and I just might eat it for breakfast. Yum!

I totally agree with devoting a post to good scrambled eggs...I think they are a perfect meal unto themselves and really deserve special attention in order for them to achieve their potential for being extraordinary! I will try your method with putting half the butter in the eggs in chuncks...I can just imagine how fantastic that would be! I do like my eggs runny though...but that's just a personal preference :)
