Carrot Rapees

I have been dying to make this recipe for the past couple weeks.  I am not sure why as it is a big bowl of carrots basically;  but, the photos visually grabbed me and I have been thinking about it often.  We had a big bowl of it around all weekend.  I even bought a big bag of beets to try making it again this week.

So good!  So easy!

A day late … a dollar short!  We are down to the very bare essentials in our home due to working, traveling & the big bad tooth (which turned out to be a Big Bad Sinus)!  All we have is a fridge with enough milk to enjoy coffee the next couple days, a couple ears of white corn, an onion, some Meyer Lemons (thank you Deb) and a big bag of carrots;  as well as the usual suspects, wine, seasonings, candied kumquats, blah blah.

Tonight we had a nice little pot of White Corn Soup – simply, flavorful and very fresh!  Recipe.  (sorry for no finished photo, the lighting sucks & the photo was as equally sucky)

Dolores of Chronicles in Culinary Curiosity, must had known that I was going to have to be eating cold food and smooth items, the next few days! She picked the perfect challenge for the Tuesdays With Dorie crowd! I have memories of Blueberry ice cream, not sure of the memory; but, I do remember being about 4 and loving blueberry ice cream. As soon as I heard about this challenge, that memory (the one I don’t remember but do remember) came rushing to mind. As well, we LOVE blueberries in our house so I knew this would be a huge hit!

Sweet Spring Peas

I have been dying to make this pea soup since I read Christine’s post. Unfortunately, by the time I read it, there were no more sweet peas to be found at the market. I stumbled upon them during our berry picking excursion last week, so I knew I had to bring some home just for that!

Christine did use the peas for a salad and the pods for the soup, since I was only making the soup, I used the peas and half of the pods. As well, I did not have an onion, so I only used garlic. It was incredibly easy and so tasty, very fresh!

Friday Night Dinner

I meant to post this a couple nights ago and time slipped by us. We had a pretty busy weekend, painting (still), wedding reception, Chinese Wedding Banquet and an insane toothache! I am dying over here while I wait for Monday to come!

I wanted to share what we had for dinner Friday night as it was really fantastic……. I caramelized some onions, added some Balsamic Vinegar, rolled out a puff pastry, covered it with onions, figs and blue cheese!

TWD: Savory Galette

While the TWD crowd was making sweet summery and fruity Galette’s last week, we were traveling. I had Galette on the brain! We love peach ones, plum ones, fig ones, berry ones, you name it, we love it! Tonight I decided to try to make a savory one for dinner. Something light. Something veggie.

I used a basic Pate Brisee; but, I put a handful of fresh rosemary into the flour! For the filling I cooked some garlic and yellow onions just until lightly browned, then I added thinly sliced fennel and Portabella Mushrooms, and a sprinkle of white wine. I cooked it just until everything was warmed and slightly limp. Then I wrapped it nicely in the Pate Brisee, baked and served with a simple green salad and a glass of white wine.

Lenny’s two cents: Delicious! Really good! It did not even need any hot sauce!
