When under the weather, I seem to crave spicy food and Lenny always loves spicy, sick or not. I wanted something good and simple for dinner tonight, as well it had to be something that I could use some of the Red Leaf Lettuce that the littlest M of MEM and I planted, for
Andrea’s GYO for April Event. I turned to one of my Donna Hay books – always a given for simple and tasty!
This recipe used spicy red Thai peppers, sesame seeds, Kaffir Lime leaves (my market finally had some) and cilantro.All these great spices made this did not only spicy, but very refreshing with the lime leaves – they give a dish an entire new dimension! The sesame seeds added a nice nutty taste as well as some extra crunch.
The recipe asks you to serve it over watercress, I did incorporate some of the red leaf lettuce that we are growing in our garden in honor of GYO this month. It was a nice contrast not only with color but flavor, mellowed out the bite on the watercress. As well we served a soy based dipping sauce that was flavored with Meyer Lemon juice and brown sugar, I did garnish it with some of the Red Pepper Flakes, which dissolved and made it a little spicy.
Great dish and exactly what the doctor ordered!
