Eggplant Stacks

I went to the farmer’s market today, the first time I have been to the Saturday one in years! So glad I did as my favorite little girls where just sitting there waiting for me to buy them, take them home and turn them into something wonderful ~ Eggplant Stacks. Served with a simple Heirloom Tomato salad, crusty french bread and homemade butter inspired by Miche Mache! Wonderful evening we had!
